After culinary school I spent about a year cooking at a restaurant in New York City, and one of the things they were known for is their biscuits. I’ve probably eaten hundreds of them—so it’s safe to say that they’re pretty damn good. I got a copy of the recipe before I left and I’ve adapted it here for you to make at home. Give it a try and I dare you to tell me these aren’t some of the best biscuits you’ve ever tasted!

Buttermilk Biscuits:

  • 3 cups all-purpose flour, plus more for dusting
  • 2 tablespoons plus 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon baking soda
  • 2 sticks (1/2 pound) cold unsalted butter, diced
  • 1 1/2 cups cold buttermilk

Procedure:

  1. Preheat the oven to 450˚F.
  2. Add the flour, baking powder, sugar, salt, and baking soda to a bowl. Give it a mix. (Your fingers will do.) Add the butter to the dry ingredients and cut into small pieces with a pastry blender.
  3. Pour in the buttermilk and stir until it starts to come together. There will still be lots of dry bits, but don’t panic! Turn the dough out onto a lightly floured surface. Roll it out and fold it over on itself 2 to 3 times until a homogenous dough is formed.
  4. Form into a shape about 3/4-inch thick and portion into individual biscuits. (You can choose your own adventure when it comes to size and shape—I opted for 3-inch circles.)
  5. Place in a dish or on a baking sheet and bake until a light golden brown, about 18 minutes.
