As an independent young woman with a crazy schedule, I’ve learned to really appreciate the convenience of an old-fashioned crockpot. So much so that I now own two of them. For those weekday nights when you’re too tired to do anything else and just want to relax, the slow cooker is a great household tool to use for a hearty and easy dinner.

Though I’m still learning the ins and outs of my new kitchen toy, I decided to give this recipe a try. The great thing about slow cookers is that you can add all of your ingredients, turn it on and forget about it. How much easier could cooking get?

Here’s a great recipe I stumbled upon on Google for Ppulled BBQ chicken sandwiches:

Ingredients

boneless chicken breast (amount depends on the desired serving)
1 1/2 cups BBQ sauce (of your choice-I used Sweet Baby Ray’s)
1 tbsp Worcestershire sauce
1 tbsp olive oil
2 tbsp brown sugar
1/2 medium onion (optional)

*I added water and seasoning to the mix to thin out the sauce*

Now that you have all of your ingredients handy, let’s get to it. First, add everything to your crockpot. When I made my dinner, I was only cooking for two people, so I only used two chicken breasts. Feel free to change the amounts based on the number of people you’re feeding.

Second, turn the crockpot on to the desired temperature. With most recipes, you can turn the crockpot on high or low. However, if you cook this dish on low, it will take around six hours to make. But if you cook it on high, it cuts the time in half. I chose to cook the meal on high because I wanted to eat dinner before 9 p.m.

Once the crockpot is going, I set a timer for three hours and I continued on with my daily schedule. Every once in a while, I would pop in and stir it but other than that, I didn’t have to watch it much. About two-and-a-half hours into the cooking, the chicken should be thoroughly cooked through. Grab a plate and two forks so you can prepare to shred the chicken.

Remove each chicken breast from the pot, place it on a plate and then use two forks to shred the chicken to your liking. I prefer chicken that is really shredded, so I made sure not to leave any large chunks. Once the chicken is all prepared, simply toss it back in the pot, and let it continue to cook.

After three hours, turn the crockpot off and grab a nice-sized bun. Add the chicken to the bun and any toppings you desire. Feel free to also add a side of fries or chips. Voilà, dinner is served!
